whoopie pies.
my mom is the best baker ever. she surprised me and mike with some of these to bring back home. they are probably my favorite thing she makes. although i try my hardest to duplicate them, she is just the best. the reason i love these is because the filling isn't just vanilla frosting, it's more marshmallow-y.
here is the [not-so] secret [anymore] recipe
cake ingredients:
1/2 cup crisco
1 cup sugar
1 egg
1 teaspoon vanilla
2 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup cocoa
1 cup milk
cake directions:
- preheat oven to 375 degrees
- cream crisco and sugar, add egg, vanilla and beat
- stir the dry ingredients then add to wet mixture alternatingly with the milk
- the mixture will be dense
- drop teaspoons onto a ungreased cookie sheet
- bake for about 7 minutes
filling ingredients:
fyi - make this in a larger bowl because it makes a mess
1 cup Crisco
1 cup confectionary sugar
1 cup marshmallow fluff
1 teaspoon vanilla
filling directions:
- whip crisco well
- mix in the sugar then the marshmallow and vanilla
- beat very well
assembly directions:
- when the cakes are cool, spread about 2 tablespoons of filling between two cakes
