i love strawberry shortcake, but strawberries can be expensive! so when my parents came up to visit for dinner earlier this week, and i knew peaches were on sale, i thought this take on shortcake would be perfect. this recipe makes about 6 or 7 shortcakes depending how many peaches you like in each serving or how big you make the biscuits.
ingredients:
- 2 cups bisquik
- 3/4 cup milk
- 7 peaches
- 5 tablespoons sugar
- whipped cream
directions:
- preheat oven to 450 degrees.
- remove the pits and cut up the peaches into thin slices. [i prefer to keep the skin on for texture and taste.]
- combine the peach slices and 3 tablespoons of sugar. put in the fridge to make syrup for at least two hours.
- combine 2 cups bisquik, 3/4 cup milk, and 2 teaspoons of sugar. [yes, i know this is basically the recipe on the box, but it is so easy and i honestly haven't found anything more delicious.]
- shape into 6 or 7 biscuits on an ungreased cookie sheet and bake for 8-10 minutes or until the bottoms are golden brown.
- layer cooled biscuits, peaches, and whipped cream to enjoy!
