i went looking for recipes with banana when i bought a bunch of bananas and after a few days they looked like this:
i found this recipe on six sisters and decided to alter it a bit to be more like a recipe my mom made me growing up. they were called "ranger cookies." i'll share that actual recipe another day.
ingredients:
1 1/2 cup flour
1 teaspoon baking soda
3/4 cup salted butter (softened)
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 1/2 teaspoon vanilla extract
2 large bananas
1 cup old-fashioned rolled oats
2 cups chocolate chips
1 cup rice krispies
directions:
- preheat oven to 375 degrees
- combine flour and baking soda and set aside
- combine butter and sugars; beat on medium-high until fluffy
- add the egg and vanilla to the butter/sugars and beat on medium until combined
- mash and add the bananas then flour mixture and mix by hand
- mix in oats, chocolate chips, and rice krispies by hand just until mixed
- scoop rounded tablespoons onto an ungreased cookie sheet
- bake for 10-12 minutes until firm and golden brown
bananas added to the wet mix [not too finely mashed] |
