Like seriously!
What would I do without them? Well, I can at least tell you that my last two weeks definitely would have been different.
To start off, I can tell you I would have eaten less sweets. A few weeks back, I made Kristin's cake batter rice krispy treats, so when I saw that she created brownie batter treats, I knew they would be a perfect addition to our DMB tailgate last weekend.
This past weekend, Amanda [who just made the jump to Blogger yaaayyy] and I took a beach trip down to my home town. We've had a few blates before, one even included me calling her up the night before a race to come run Color Me Rad with me! She's the best, and even though she is one of my bloggy friends, she is definitely an awesome IRL friend as well :)
Ever since Heather gave me a Liebster way back when, she has been one of my go-to girls. We are going to finally meet up when we both do Run Disney's Wine and Dine Half Marathon in November!! Well, she introduced me to this amazing Chicken and Doritos casserole a while back, and I finally made it last week. You won't be disappointed with this one!
[I even whipped out the Mickey Mouse utensils for this one ;) ]
Ingredients:
- 1 lb raw chicken breast or tenders
- 1 bag of Nacho Cheese Doritos
- 1 can Rotel tomatoes
- 1 pound Velveeta cheese
- 1 can Campbell's Cream of Chicken soup
- 1 can Campbell's Cream of Celery soup
Directions:
- Preheat oven to 350 degrees.
- Cut chicken into preferred size and saute in a skillet until no longer pink.
- In a medium pot, combine Rotel, Velveeta, and soups. Cook on medium until Velveeta is melted.
- Layer whole Dorito chips on the bottom of a 9x13 pan.
- Put chicken on top of chips and sauce on top of chicken.
- Bake for 20 minutes.
- Take out of the oven and sprinkle crushed Doritos on top. Bake for another 5 minutes.
- Let rest out of oven for a few minutes outside of the oven before serving.
My favorite part of Heather's recipe was her suggestion to upsize to a family size bag of Doritos. Her little sisters love to dip extra chips in the casserole sauce. That got me thinking that next time I make this, I think I'm going to make it as a dip [like buffalo chicken dip] by skipping the bottom Doritos and shredding the chicken. Then I can dip chips in ALL of it!
It was my boss's birthday last week, so I made Jen's black forest cupcakes. Seriously, they were amazing, and who would have believe that each one had less than 175 calories?!? I also guest posted for her yesterday, so check that out if you didn't already!
After writing about receiving Witch Hazel wipes from Heather, Allison said that she also had some from her VoxBox that she won't use. Holy moly, I won't have to buy face wipes for a looooong time!
