Let's just jump right into this...
So let's talk about how I was prepared (prepared!) for Meg and Amanda's Kitchen Mix-Up link-up last week. I had my recipe made. I had my pictures tooken. I had my editing done. I...missed the link-up day. By the time I found out, I was at work. The post wasn't quite ready on Tuesday and I had already posted that day, so I just didn't post. I had thought it was on the last Thursday of the month instead of the last Tuesday.
Right now I'm thinking of that quote from Friends...Joey saying, "I almost lost another girl to math!", when he miscounted apartment windows to find out what floor some girl was on.
I should learn how to read.
{INTERRUPTION BY MEG: Yes, it was supposed to be Thursday, but I am a space shot and thought both beginning and end of the month were on Tuesdays...... soooooo, sorry Kristin!}
Quick Apple Cake with Cream Cheese Frosting
makes one 9" pie pan
1 cup flour
1 t. baking soda
1/4 t. salt
1 t. cinnamon
1 egg
2 t. vanilla
3 T. apple butter
1 T. melted butter
1/4 cup apple sauce
3/4 cup brown sugar
1 large baking apple (I used Granny Smith), peeled and finely diced
3/4 cup butterscotch chips
Stir all of the ingredients together very well with a wooden spoon in a big bowl (really, that's it).
Pour into a greased 9" pie pan (I used glass) or an 8x8" pan. Bake at 375 degrees for 13-15 minutes, until a toothpick comes out of the center clean.
Let cool and then spread on the Cream Cheese frosting. If you're pressed for time, use a can of cream cheese frosting. Either way, you can't go wrong! I like to spread it on while the cake is warm.
Cream Cheese Frosting
4 oz. cream cheese, softened
1/2 stick (4 T) butter, softened
1 t. vanilla
2-ish cups powdered sugar (maybe more depending on the consistency you'd like)
1/2 T. meringue powder (optional, but will help the frosting harden)
With an electric mixer, cream together the cream cheese, butter, and vanilla. Once smooth, start adding in the powdered sugar and then the meringue powder. Mix until all is blended together. Store any leftovers in the refrigerator.
