The Famous Taco Soup

Going back to Christmas a little for this one [we took our decorations down this weekend, and I am already missing our tree!].  I have an amazingly simple, pretty healthy, and all-around delicious recipe for you today!  The Christmas Eve tradition in Mike's family is to have different soups between church services.  I made my butternut squash and chicken soup, Mike's sister made broccoli cheddar soup, and Mike made his mom's famous taco soup!  It was just delicious!!

This recipe serves about 6-7 people, but can easily be doubled.  

Ingredients:
- 3/4 pound hamburger [browned and drained]
- 1 small onion [chopped and browned with meat]
- 1 large can diced tomatoes
- 1 large can Campbell's Ready to Eat Chunky Style Beef with Vegetables Soup
- 1 can kidney beans
- 1 can tomato soup
- 1 teaspoon taco seasoning
- 1/2 teaspoon chili powder
- dash of garlic powder
- 1/2 pint mild salsa
- sour cream and shredded cheese for garnish
Directions:
- Put all ingredients in large pan [make sure hamburge and onion are browned and drained first].
- Simmer for 45 minutes.
- Serve over nacho chips broken up in bowl.
- Garnish with sour cream and shredded cheese.

I'm glad to hear someone else had their tree up for weeks after Christmas. I firmly believe that since we won't see it for another 11 months we should squeeze all the enjoyment out of it that we can. Not to mention that it's a lot of work to take down so why rush? ;)
