Mike and I are Olive Garden-lovers. I take that back, we love ANYTHING Italian. Even though he's not Italian [I am! Proud to be 1/4 Italian and 1/4 Austrian - they spoke/ate/acted Italian], he sure knows how to cook Italian! This recipe was his idea and with only a little help from my mom, he created a fantastic meal!
Ingredients:
9 lasagna noodles
1 egg
1 cup ricotta cheese
1/4 cup grated parmesan cheese
1/2 cup mozzarella cheese, divided into two 1/4 cups
pinches of parsley and garlic powder
1/8 cup seasoned bread crumbs
3 cups of your favorite pasta sauce
Directions:
- Preheat oven to 350 degrees.
- Boil water and cook lasagna noodles as directed on box
- Beat egg in medium bowl
- Add ricotta cheese, half of mozzarella cheese, parmesan cheese, parsley, and garlic powder. Mix well
- Line a loaf pan with about 1 1/2 cups of sauce
- Drain the pasta and dry it off with a paper towel. Divide the cheese mixture in the bowl into 9 even sections. Scoop one section of cheese onto a noodle, spread it across the noodle, and roll it up [as seen below].
- Stand the noodle tubes up in the loaf pan and repeat the previous step with each noodle.
- Spread the remaining sauce, mozzarella cheese, and bread crumbs on top of the noodle tubes.
- Bake uncovered for 30 minutes.

These look delicious. We made a similar version and used pepperoni in the rolls.
These look so good- I love the idea of putting the bread crumbs on top for an added crunch! I've actually had these on my list of meals to make two or three times, but for some reason I never end up making them-- I might have to now :)

Those look so good! I like the rollups better than lasagna because I feel like it can be portioned out better. That is my theory at least! ;)
