Leftover Halloween Candy? Butterfinger Doodles.
Yeah, I know what you're thinking: What is leftover Halloween candy? Well, when you and your husband decide not to buy candy until Halloween day [so you don't eat it all], he buys a Costco-sized mixed bag, and you get zero trick-or-treaters, you are left this big bucket of candy you can't physically eat on your own. So, this week, I started creating. This is the first of a couple recipes I will share, and each one is sort of a "mini batch" so even if you don't have a ton of candy leftover, you can still try it. This cookie is my take on a Snickerdoodle: it's delicious and chewy from the baked Butterfingers, and I just love the little spice from the cinnamon.
RECIPE:
Ingredients:
- 3/4 cup flour
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 1/4 teaspoon cinnamon
- 2/3 cup granulated sugar
- 1/2 stick butter at room temperature
- 1 egg
- 10 broken up [not completely crushed] mini or 5 fun size Butterfinger
For extra peanut buttery flavor, add 1/4 cup of smooth or crunchy peanut butter after adding in the egg.
Directions:
1. Preheat over to 375 degrees.
2. Combine flour, baking soda, salt, and cinnamon in medium bowl, mix, and set aside.
3. Cream sugar and butter in mixer.
4. Add egg until mixed and slowly add dry mixture.
5. Remove dough from mix and stir in crushed Butterfinger.
6. Drop rounded teaspoons onto greased cookie sheet [Butterfinger makes the cookies sticky] and cook in oven for 10 minutes.
