Making That "Good Walk" A Little Less Spoiled

Some of you might have heard my favorite Mark Twain quote before: "Golf is a good walk spoiled."  Well, sometimes, I have to admit, I agree with Mr. Twain.  For those of you who might not know, I've been a golfer almost all of my life (21 of the 26 years, to be exact).  While I love being outside and smacking the golf ball as far as I can, even I have to admit that some days on the golf course can feel a bit longer than I'd like.  Maybe it's because I'm not playing that well, or sometimes it's just really hot outside, or it could be because that group in front of us is moving way too slowly.  In any case, the only reason any of these things actually get to me is because I'm SO HUNGRY.  

When I'm hungry, I am not myself.  (Just ask my husband.)  Drives go to the left and right, my mind wanders, and I can't possibly concentrate for enough time to line up a putt.  You know what helps?  A SNICKERS® as one of my golf bag essentials.

Things Go Better With Coke (Like Basketball and Ice Cream)

Moving down to South Carolina last year, 2015 is our first NCAA® March Madness out of our home state of Connecticut.  Unfortunately, our beloved Huskies did not make the men's tournament this year (go ladies!), but, as always, we are still loving the madness.

A couple of months ago, we joined a kickball team with other twenty-somethings in the area.  To our surprise, the entire team was made up of people who also had moved to Charleston within the last year.  Our teammates were from all over: Pennsylvania, Oregon, Virginia, Indiana, Georgia, and we all have one thing in common (besides our passion for kickball): love for our college teams.  Many of their teams made it into NCAA® March Madness this year, so we decided to host a little get together for the Sweet Sixteen, featuring ice cream floats made with Coca-Cola NCAA® Final Four Pack available at Walmart at center court.

With Charleston's warm weather this time of year, a float bar was the perfect idea to keep our guests refreshed and taste test the three different flavors that are available in four packs from Walmart: Coke Zero, Cherry Coke, and Vanilla Coke.

I also busted out my baking skills and made cookies with chocolate candies to match everyone's favorite teams' colors (even if most of them were already knocked out of the tourney by the Sweet Sixteen haha) and basketball brownie pops.  To add a little variety, I put together a vegetable tray shaped like a basketball to round out the theme. 

Our guests loved the floats, and if we were having our own NCAA® March Madness of Coke flavors, the winner would definitely have been Cherry Coke.  I, personally, liked it mixed with chocolate ice cream and a shot of rum.

Navy, mint, peach, and magenta - springtime favorites

Spring has finally sprung in Charleston!  I am loving the weather and seeing all of the trees in bloom.  After hitting up the Loft Outlet last month, Kate mentioned going to the J Crew recently.  Because I love her sense of style (and a good bargain), I decided to check out if there was one near me.  Sure enough, in the same outlet mall where I found Loft, there is a J Crew. So. Excited.  And that's how this month's OOTM came to be...

Wedding Wednesday: Family & Bridal Party Portraits

As for my wedding updates, I left off with our receiving line, and now it was time for more photos!  We did separate photos before the ceremony, but wanted to have photos together at both our ceremony and reception venues.  Before we hopped in the limos, we took our family and bridal party photos in front of the beautiful ivy of Fenwick Hall.  We even had a chance to sneak back into the chapel to take a couple of photos as husband and wife.

Chicken Parmesan Calzone

When I started this blog, I had no idea what I was doing.  (Okay, I still usually don't know haha.)  I wrote a lot of recipes, but didn't exactly take the best photos: Example A.  I often go back to my Recipe Index and use it as a cookbook.  A few recipes in particular just make my stomach turn with their quality, so I thought I'd go back and add new photos.  While I did that to recipes like my Buffalo Chicken Dip, my calzone and pepperoni bread recipe post was beyond repair.  Look out for a future pepperoni bread-redo post.  We love making breads and calzones, and if you live in the South, Publix has fantastic refrigerated dough!  These are fantastic to slice thin for parties or just have for dinner.
Ingredients:
1 refrigerated pizza dough
flour for dusting surfaces
3 breaded chicken patties
1/2 cup pizza sauce
1/4 pound (a few slices) provolone cheese
1 cup mozzarella cheese
optional: 1/2 cup ricotta cheese for extra cheesy flavor
1 egg
Non-stick cooking spray

Directions:
- Before preparation, take the pizza dough out of the refrigerator, place in a bowl, and let rise under a warm cloth for a half hour.
- When ready to make, preheat the oven to 375 degrees.
- Place the 3 chicken patties on a microwave-safe plate and cook according to microwave instructions (For Perdue, it was 3 minutes on high.).  Let cool slightly and then slice into 1/2 inch wide strips.
- Roll out the pizza dough into an oval.
- Spread the pizza sauce, then provolone cheese, chicken strips, and mozzarella cheese (and ricotta, if you choose) onto the pizza dough, leaving 2 inches around each edge for easy folding.
- Fold the dough in thirds with the seam on top.
- Scramble the egg and paint egg wash in seams to help seal the dough.
- Line the baking tin with cooking spray and flip the calzone over onto the tray so that the seams are all facing down.
- Egg wash the entire top of the calzone.
- Bake for 30 minutes.
- After done baking, let the calzone rest for at least 10 minutes to help it set.
- Cut into slices and enjoy!

Weekend (and Bracket) Busted

But let's be real, whose bracket isn't busted?! Moving on...

Friday afternoon, Mike and I snuck in 18 holes of golf.  I tried very hard to take a few photos on the course for this week's Scavenger Hunt Sunday, but we got hooked up with a nice guy and I ended up taking $10 from him in a match on the back nine - whoops.  I did, however, get time to capture: "what I did today" and "green."

Saturday, we headed downtown to watch some basketball at The Alley with some of our kickball teammates, and spent the afternoon soaking up the sun.  Gillian came over at night, and we had a fantastic blogger sesh with Mike's makes-you-fuzzy navels.

On Sunday I worked all day at a Kids Fair, and came home to crash on the couch with delicious ravioli made by Mike and tons of tv catch up: SNL, Revenge, and, of course, bedtime 30 Rock.

Well, that's it!  This week is shaping up to be great, too.  I'm heading over to meet Jillian's new addition, Miss Violet, with Shelby after work, and a double date night back to The Alley with Erika and her husband on Wednesday is sure to be a lot of fun!

Snack Better with DOVE® Fruit

It's March; remember those New Year's Resolutions we made way back at the beginning of 2015?  Who else cheated on that "better eating" one with Valentine's Day... and Fat Tuesday... and that Friday date night... and that occasional Monday when work was just the worst?  Yeah, me too.

Well, I have the perfect indulgence for you tonight that won't break all that good you did today.  It all starts with DOVE® Fruit's whole cherries dipped in creamy DOVE® dark chocolate and makes a great single-serve dessert filled with calcium and protein: Chocolate Covered Cherry Parfaits.

Walking anywhere near the candy aisle is usually never a good idea, but at Walmart, it's next to the card aisle.  I had (kidding!!) to buy Mike a birthday card earlier this month, so obviously my eyes wandered.  Luckily, DOVE® Fruit was right on the end of the aisle.  Apparently I'm not the only one excited for the whole cherries, because there were only two packages left in the entire section!  Sorry, blueberries and cranberries.


Now onto the Chocolate Covered Cherry Parfaits.  All you need are three ingredients:
- a handful (8 or so) DOVE® Fruit whole cherries dipped in creamy DOVE® dark chocolate
- 1/2 cup lowfat vanilla yogurt
- 1 full chocolate graham cracker sheet

I made my parfait with two layers yogurt surrounded by three layers of graham cracker crumbs and crushed DOVE® Fruit Cherries.  It was delicious!

Okay, now let's be real, DOVE® Fruit is also wonderful on its own.  Grab a handful and it's definitely a better-for-you indulgence to keep your sweet tooth in check!
