We've been loving seafood in our house recently. And almost just as much as we love eating, Mike's been enjoying concocting new recipes. He made this fantastic citrus sauce that that's great to dip shrimp in or on fish. We also tried it with Nicole's Coconut Chicken recently, and it was fantastic - so I guess it's not just for seafood :)
Ingredients:
- Juice from half a lime
- 1/2 cup orange marmalade
- 1/2 pineapple tidbits (partially drained)
Just combine the ingredients and enjoy! This recipe stores well in the fridge for 2-3 weeks.

I just tried an apricot flavored coconut shrimp over the weekend. Yours looks great!
YES! I've made coconut shrimp and just used orange marmalade. The pineapple mixed with BBQ sauce is an awesome way to cook meatballs also :)
That sounds so yummy! And easy - and lets be honest - that's my main criteria for whipping up anything in the kitchen.
