Fall Flavors: Apple Crisp

With fall weather creeping in this past weekend (don't worry, it's not staying long - back to the high 70s tomorrow!), I was in the mood to make something autumn-y.  I've had this crisp recipe for a long time, and it's always been a favorite!  Add some vanilla bean ice cream, and it's the perfect dessert!
Ingredients:
3 pound bag of Macintosh apples
1 box of Betty Crocker Pie Crust Mix
1/4 cup packed brown sugar
3/4 cup sugar
3 tablespoons flour
3 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 stick butter

Directions:
1. Preheat oven to 350 degrees.
2. Peel and slice the apples into thin pieces, set aside.
3. Mix 1 cup of the pie mix with 3 tablespoons of water and press with well-floured (this is in addition to the 3 tablespoons of flour in the recipe) fingers into the bottom of a pie plate.
4. Mix the rest of the pie mix with 1 tablespoon of water and the brown sugar.  Put this aside; this will be the crisp topping.
5. In a large bowl, combine sugar, flour, cinnamon, and nutmeg.  Pour apples into bowl and mix to coat.
6. Put coated apples into pie pan and top with crumble topping.
7. Dice chilled butter and place pieces all over the top of the crisp.
8. Bake crisp in the oven for 35-40 minutes.

I love making apple crisp every year but someone's husband this year decided to wear shorts to the orchard when we went on an overcast day and after we ate, he was freezing and we didn't make it out to pick apples. He promised we'd go back, but of course, we haven't yet!
